Pedro Ximénez (also known as PX) is a white wine grape variety that is widely grown in the Andalusia region of southern Spain. Pedro Ximénez is most often used to make sweet and fortified wines. The grapes are dried in the sun to concentrate their sugar content, resulting in wines that are rich and lusciously sweet. PX delivers low acid, moderate to high alcohol wines used in the production of dry white wines, sweet fortified wines and super-sweet molasses-like sweet wines. PX delivers a distinct character of raisins, figs, baked fruit and dates when used to craft sweet and sweet fortified wines. They also have a nutty and toasty character, due to the influence of the oak barrels they are aged in and can be described a Christmas cake in a bottle. When produced as a dry white wine, PX has pleasant dry minerality and citrus overtones.

Perfect Pairing: Pedro Ximénez is a popular choice as a dessert wine, and pairs well with rich and sweet desserts such as chocolate cake or caramel flan. Its rich and sweet character also makes it a good match for blue cheeses, as well as spicy and savory dishes such as cured meats and paté.
