Palomino Fino

Pronounced: Pa-loh-mee-no Fee-no.

Palomino Fino is native to the Andalusia region in southern Spain. No other grape on the planet provides the same open canvas for winemakers that Palomino Fino does. It is a high yielding grape that delivers a low acid base wine that is ideal for Sherry production. It flourishes in the highly calcareous albariza soil of Andalusia and delivers a neutral still, dry white wine when produced as a single varietal.

In terms of flavour and aroma profile, there really isn't much to discuss on mainland Spain, where Palomino Fino produces wines that are light-bodied and crisp with a modest (fairly neutral) apple and peach profile. Under it's synonym Listán Blanco de Canaria, Palomino Fino takes on an entirely different character on the volcanic soils of Las Islas Canarias. Listán Blanco takes on a profile of quince, lemon, white peach and a delicious subtle minerality that is simply delicious. Unfortunately, Listán Blanco de Canaria is as hard to obtain in Australia as it is quaffable.
