Manzanilla is produced in Sanlúcar de Barrameda within the Jerez triangle. DO Manzanilla-Sanlúcar de Barrameda occupies the same boundaries as DO Jerez-Xeres-Sherry, whilst benefiting from adjacency to the Atlantic ocean and the prevailing humidity that influences the aging process. Manzanilla is slightly softer, more floral (camomile) and saline than Fino's from Jerez. Manzanilla actually means Camomile in Spanish. The wine is pale in colour, still super dry, crisp, sharp, and slightly bitter to finish. Manzanilla Papirusa is light bodied, has pronounced green apple, sea spray and almond flavours and aromas, and possesses some dough characteristics.
Perfect Pairings: Freshly shucked oysters and samphire seaweed.
