Amontillado have the benefit of both the biological and oxidative aging process (roughly four years of each process). That means that they possess the green apple and dough of a Fino but also a slightly richer, fuller drier savoury finish that is closer to an Oloroso. This 'Los Arcos' Amontillado gives way to the typical almond flavours of a Fino and Manzanilla and instead move into the arena of hazelnut flavours and aromas, together with some dried fruit and tobacco nuances. It is darker coloured courtesy of the oxidative aging that it undergoes.
Perfect Pairings: Amontillado is particularly flexible in terms of food pairings, so rather than provide an exhaustive list, I'm going to recommend a simple mushroom dish. Garlic mushrooms or mushroom pate on a crusty baguette.
